the tea plant and moisturizing its leaves.
Both black and green tea leaves come from the same
plant source, Camellia sinensis. The leaves that eventually become
black tea are first broken up and exposed to air. This process promotes
oxidation and deactivation of the valuable Polyphenols. With brewed
Green tea, the lack of fermentation protects Polyphenols by destroying
the enzyme that oxidizes them.

After Assam tea leaves are picked, they are inspected
and sorted by hand. Withering takes place as water evaporates and the
natural process of fermentation takes place. Fermentation, also known

green to brown .This process is accelerated by increased heat and high
